Mofongo

Gilberto Rolon is alive and well. So well that he’s made some mofongo for me and brought it to me at work for lunch (with some fried chicken on the side). Good cooking. Very good cooking considering this man has spent most of his life letting others cook for him. Now he’s cooking for me. Twice.
Yes, Pop is alive & well and I get mofongo. Life is good.
